POTATO PANCAKES

Growing up, my Grandpa would make the most amazing potato pancakes when we would have brunch at his house. This is not his recipe, it's my own version. I'm pretty sure his were laden with eggs and oil...but he always appreciated my knack for healthier cooking, so I think he would approve! My kiddos love these with homemade applesauce on the weekends.

Potato Pancakes

makes about 10 small pancakes

3 large russet potatoes
1 tablespoon ground flax seed
2 tablespoons warm water
1/3 cup non dairy milk like almond or oat
1/4 cup white whole wheat flour
1/2 teaspoon baking powder
salt and pepper to taste
butter for cooking 

Mix ground flax seed and warm water in medium bowl. Add milk, flour, baking powder, salt and pepper and mix. Peel and grate potatoes and stir into batter.

Heat 1 tablespoon of butter over med-high heat and cook pancakes about 2 -3 minutes on each side, or until golden brown. Serve immediately with sour cream, fresh applesauce, butter, or maple syrup.
