CHIA BANANA MUFFINS


I'm really big on clean eating these days and I love finding ways to incorporate super foods like chia seeds into our everyday. Eating healthy doesn't have to be boring! I try to stick to organic and whole foods when baking so these banana muffins are made with raw honey, coconut oil, chia seeds, and whole wheat. 

CHIA BANANA MUFFINS

makes 1 dozen

1/3 cup coconut oil, melted
1 organic egg
3 ripe bananas
2/3 cup raw honey
1 1/2 cups white whole wheat flour 
1 teaspoon baking powder
1 teaspoon baking soda
dash of sea salt
1 teaspoon cinnamon
1/3 cup chia seeds

Preheat oven to 350. Mash bananas in mixing bowl. Add melted coconut oil, egg, and honey. Beat until well combined. Add flour, baking powder, baking soda, sea salt, and cinnamon all at once. Stir in chia seeds. Spray muffin pan with coconut oil (or line with cups) and fill each 3/4 of the way full. Bake approximately 18 minutes or until tops are golden brown. Cool for 5 minutes before turning out of pan.
