CLEAN EATING BANANA MUFFINS


Banana muffins are a favorite around here. I made these last week and they disappeared so fast we had none leftover for breakfast the next day! So I planned ahead and made a double batch this time. These are so easy and a big hit with the little ones. I call them clean eating muffins because we really try to eat mostly unprocessed, whole foods and all the ingredients in these are pretty natural. I think we will be baking these up a lot this summer!

Banana Muffins

makes 1 dozen

1/3 cup coconut oil, melted
1 organic egg
3 ripe bananas
2/3 cup raw honey
1 1/2 cups white whole wheat flour 
1 teaspoon baking powder
1 teaspoon baking soda
dash of sea salt
1 teaspoon cinnamon

Preheat oven to 350. Mash bananas in mixing bowl. Add melted coconut oil, egg, and honey. Beat until well combined. Add flour, baking powder, baking soda, sea salt, and cinnamon all at once. Stir until thoroughly mixed. Spray muffin pan with coconut oil (or line with cups) and fill each 3/4 of the way full. Bake approximately 18 minutes or until tops are golden brown. Cool for 5 minutes before turning out of pan.
